◇Hamo sushi roll with fresh ginger rice

Fresh conger eel is grilled over a wood fire, coated with a sweet and spicy sauce made by simmering it with Japanese pepper.Rice cooked in a clay pot is combined with pickled fresh ginger in sweet vinegar to make a sushi roll.The Sansho berries sandwiched between the conger eel and rice add a spicy accent.It is brought to your table in a wooden box, capturing the aroma of the wood fire.Enjoy the taste of summer.
