The bone-in lamb is slowly roasted over a firewood, softening the unique aroma of lamb and allowing you to enjoy a deep flavor that spreads the more you chew it.The sauce, made from butterbur shoots and sake lees miso, adds a subtle spring scent, while Maldon salt, homemade Japanese pepper salt, pickled kumquats in sweet vinegar, and wild garlic each bring out their own different flavors.Come to SHOTOEN and enjoy a luxurious dish that captures the bounty of spring.
