Course menu
◇Winter-grilled wild sweetfish with clay pot rice
A whole wild sweetfish, fragrantly grilled over a wood fire, is served on top of rice cooked in bonito and kelp broth.A clay pot that captures the aroma of firewood will be brought to your table.
The dish is served with ginger and shiso leaves as garnishes.We recommend serving it on rice and enjoying the summery aroma and texture.
To finish, pour some warm soup stock over the dish and enjoy it like ochazuke.
